What happens if you don't harvest corn?

It is just part of the natural cycle. Animals will eat the unharvested food, often in the manner best suited for seed dispersal. the seeds will lie dormant once the parent plant falls over, or the fruiting body gets eaten, etc, and when conditions are right for growth- they sprout.
